There is another solution that does not take up too much room in the fridge. Keeping the head of celery intact, slice a thin layer off the base of the root. This is done to expose some cells so that the root can take up water. Now, dampen a couple of layers of paper towels and wrap the paper towels around the based of the head of celery.
